Here’s my version of the green juice I recently had at True Food Kitchen – one of my favorite healthy, allergy-friendly restaurants.
Their Kale-Aid is juiced, and contains kale, apple, cucumber, celery, lemon and ginger. I boosted it with a couple bonus ingredients -feel free to modify this to what you have on hand.
Mine is blended and includes all the fiber from the greens and fruit, and a couple extra ingredients.
A lot of people ask me if I prefer juices or smoothies – I would say for daily consumption I would always choose a smoothie. I like the additional fiber content, which helps slow down how fast the sugar in the fruits gets into our bloodstream. Fiber also plays an important role in our digestion.
The skin of an apple is rich in Vitamin C, and other vitamins and minerals. Blending the whole fruit retains many of these health benefits along with the gut-health supporting fiber. I won’t say no to a green juice when I’m out to eat – but when I’m at home I prefer smoothies.
